- Why is it not a symbolic number?

The 'one hundred and forty-four thousand' is special. It cannot be symbolic, because then it would not be special.
Why are they special? > And no one could learn the song, BUT ONLY THE one hundred and forty-four thousand.

They are special because they are in a New Covenant and only they could keep it, under the greatest satanic test ever. Presumably, according to the reading of the following text, each of them died as a martyr, that is, they were executed, of course, amidst the greatest trials and pains (the evil Satan knew how to do this in the most evil way): Revelation 21:4. And I saw thrones, and they sat on them, and judgment was given to them. And I saw the souls of them that were beheaded for the testimony of Jesus, and for the word of God, and which had not worshipped the beast, neither his image, neither had received his mark upon their foreheads, or in their hands. And they came to life, and reigned with Christ a thousand years.

And I heard the number of them which were sealed, an hundred and forty and four thousand, sealed out of every tribe of the children of Israel. (Rev. 7:4)
- This is the New Covenant Israel (Jer. 31:31, Heb. 8:8), of which Daniel and Paul speak. This is the Israel of God today (Gal. 6:16). Not all went in, but 'many' (Dan.9:27, Rev. 7:4-8)

Then I looked, and behold, the Lamb stood on Mount Zion, and with him a hundred and forty-four thousand, having his name and the name of his Father written on their foreheads. (Rev. 14:1)

The mountain is a symbol of a kingdom. Why are there not more? Because that is all that is needed for this leadership role, since only so many of the watchmen fell under Satan's leadership.

And they sang a new song before the throne and before the four living creatures and the elders. And no one could learn the song except the hundred and forty-four thousand, who had been redeemed from the earth. (Rev. 14:3)

Here the words 'BUT ONLY THE' do not allow for any symbolism, mysticism, or other twist of interpretation.

This does not mean that others will not be saved. Revelation 15:2 clearly states that those in the New Covenant (i.e. the 144,000) are already saved, while Revelation 15:4 shows that others will only come later to be saved, worshipping God:
... And I saw as it were a sea of glass mingled with fire: and on the sea of glass stood them that had gotten the victory over the beast, and over his image, and over the number of his name, having harps of God in their hands. ...
... Who shall not fear, O Lord, and glorify thy name? For thou only art holy: and all nations shall come and worship before thee: for thou hast made known thy judgments. ...

And there are also those who shall be received for their good works (the righteous): John 5:28. Marvel not at this: for the hour is coming, in the which all that are in the graves shall hear his voice. 29. And they shall come forth; they that have done good, unto the resurrection of life; and they that have done evil, unto the resurrection of damnation.
Daniel 12:2. And the multitude of them that sleep in the dust of the earth shall awake, some to everlasting life, and some to shame and everlasting contempt.
This resurrection according to Daniel 12:2 and John 5:28,29 will not be in the thousand years, as the Bible Students, and Jehovah’s Witnesses, and others say, nor at the end of the 1000 years, as the Sabbatarian COGs or Seventh-day Adventists, and others say, but at the end of this 6,000-year satanic world system, at the last day:
And this is the will of him that sent me, that of all that he hath given me I should lose nothing, but should raise it up at the last day. (John 6:39)
This is the will of my Father, that everyone who sees the Son and believes in him may have eternal life; and I will raise him up at the last day. (John 6:40)
No one can come to me unless the Father who sent me draws him; and I will raise him up at the last day. (John 6:44)
Whoever eats my flesh and drinks my blood has eternal life, and I will raise him up at the last day. (John 6:54)
“I know,” Martha said to him, “that he will rise in the resurrection at the last day.” (John 11:24)
He who rejects me and does not receive my words has one who judges him: the word that I have spoken, the same will judge him at the last day. (John 12:48)

And death and the realm of the dead were cast into the lake of fire. The lake of fire is the second death. (Revelation 20:14)
And whoever was not found written in the book of life was cast into the lake of fire. (Revelation 20:15)
This means that there will be a certain short time between the first resurrection and the general resurrection, but both will be before the thousand years.

Whoever is resurrected on the last day before the thousand years in the general resurrection and is cast into the lake of fire, which is the second death, or if he dies during the thousand years as one who sinned against the holy spirit or another deadly sin, or dies at the end of the thousand years, among the rebels, he will perish in the second death in complete destruction, forever.
The misleading insertion
Revelation 20:5. The rest of the dead did not live again until the thousand years were finished.
